After Dan and I got home from church, I immediately began making lunch for us... following my meal planning guide we had cheesy potato soup & BLT's on the menu!
The soup recipe was passed along to me by a girl at work, and it has become a favorite around here... not only is it super easy {minimal ingredients} but SO SO good as well...
Ingredients:
- 1 frozen bag Potatoes O'Brien
- 1 jar Ragu Double Cheddar
- 1 package McCormicks Country Gravy
- 1 box Chicken broth
I then add all the other ingredients & stir occasionally until everything is thoroughly heated and the potatoes are cooked :) (I usually keep the stove top setting on medium low)
While the soup was cooking I prepped everything for our BLT's... and enjoyed a favorite drink I found at the store after church {I needed bacon & tomatoes... would have been hard to have BLT's without those guys haha oops!}
Yum! I usually don't buy root beer, but I'm glad it caught my attention! It tasted amazing today...
While I was busy with taking pictures to share the recipe I had to take a pic of our little monster:
Before I knew it, it was time to eat! Yay!
This meal hit the spot! So delicious and filled me up! The recipe for the soup can feed quite a few, so it is great to have left overs {which I'm sure my brother will take care of when he comes over later! :)} The soup comes out to be about 165 calories per cup... and the BLT was 195 calories... a perfect Sunday lunch at home for 360 calories :)
Today is sports day {of course!} around our house... and also a day for me to get caught up on to-do list items...
Plans for the rest of the day:
- laundry
- meal planning for next week
- haircuts for a few of my favorite boys
- finishing up my brother's birthday gift {he will be 25 this Thursday!}
- maybe a nap??? :)
I love/appreciate when you post recipes. I am stealing this entire meal for our dinner tonight!
